They're dedicated to raising and growing food sustainably and connecting people to their farm's ingredients. We're all familiar with chicken eggs but have you ever considered cooking or baking with a goose or even a turkey egg? Charlotte wasylik from chatsworth farm joins us this morning to talk all things eggs! >> Charlotte wasylik: thanks very much. It's all his pleasure to be here. >> Charlotte wasylik: and talking to a fellow egg fanatic. >> Lisa: I love eggs and probably more than the average person but I'm still learning here today. We will gate play a game of duck duck goose. Tell us about these different types of eggs and I think it's so cool like the colours never cease to amaze me. >> Charlotte wasylik: these chicken eggs are really one of my favourites and I have to say out of all my colours and people are just gob smacked when they see the colours of these eggs and one of the top questions is well do they look the same on the inside as they do on the outside and if I were to crack open every single one of those eggs and put them in a container like this, you would never in a million years have to tell which gil came from say the maroon or the olive for the green egg and they all taste the same in the shell colour is based on of the chicken so it's all based on the genetics. We can't say the same for the docks and the turkeys and the goose and so explain the size differences and which ones which. >> Charlotte wasylik: so I cracked the mall open here and you could see the big difference in the sizes over on the size and we got a turkey and then we got a massive meal and then this next one hears a duck very similar in size to the turkey and then a tiny one of the group is the chicken. But it's midget size and when you put it like that. >> Lisa: what does that come when it comes to cooking because you don't really think about it. >> Charlotte wasylik: the other most common question is how to use these eggs and I always say you treat them like any other egg and like a chicken egg and honestly chicken eggs when you compare the properties of goose or turkey or dock and chicken eggs are way down here in terms of their protein levels and the creamiest levels and goose and duck and turkey airway appear so they are excellent for baking whether you're making cakes or souffles and they just have that and they are egg year if you could see that. About all the other eggs. >> Lisa: interesting would you ever say proteins over goose egg over your toast. >> Charlotte wasylik: I do know some of our people and customers prefer to have one of these three eggs over chicken egg because it has more protein and then the yoke to white ratio is higher in dock and goose and turkey than it is. >> Lisa: what would you say the taste is different with other one? >> Charlotte wasylik: honestly it's all very similar and you will get a bit more of that creaminess-- but if you were to make some up especially with the frittata he won't notice any difference and maybe if you're having a fried egg or poached egg, slight but very similar notes overall and it's really there properties that are quite different. >> Lisa: and with a chestnut farm, if you want to order any of this and you guys can do pickups and you bring them in the city and all these eggs on the table. >> Charlotte wasylik: yes, this one with our customer gabby, these ones are your egg so see those and you could see a couple of these and these are customers as well I brought in some extra goose and turkey legs and the cool thing about bluestocking turkey is that they are incredibly seasonal so there are only available in the summer months where's chicken is available throughout the year but duck, goose and turkey follow that very historical role of the birds coming here in the spring and they lay their eggs and they migrate home where's chickens have been domesticated a little later on so they are very wild in any sense of their laying pattern. >> Lisa: with chicken do you usually give or take it won day. >> Charlotte wasylik: for the most part we have one breed of dock and they are very prolific and eggplant so we get one egg a

day or every other day but it's only for that short period of time and then they are done for the year so between mid april 2 august for them, turkeys can be a little bit random sometimes and geese are very consistent so it's mid april 2 about june and they are done. >> Lisa: this as such cool stuff and it's entertaining and anything else you want to add about this. >> Kevin: do you want to. >> Charlotte wasylik: give want to track to how hard it is? >> Lisa: it's almost like a dinosaur egg comets heavy and it feels like it's just jampacked. >> Charlotte wasylik: do it on here because it will make that pan go flying. Racket and put it in there. >> Charlotte wasylik: and the shell and membrane are incredibly sharp strong. >> Lisa: wow, that is thick. >> Charlotte wasylik: it's thick and very translucent white. >> Lisa: my goodness, that is massive. >> Charlotte wasylik: if people want to start cooking or baking with them and the best ones to start is once you don't have to worry so I'm an frittata is an quiche because then you are not having to worry about that science of the baking if you do want to bake with them, just measure everything out so then you know what you want to use. So find a recipe that uses grounds and then you will be set. >> Lisa: I know you offer some recipes and do some cooking on your instagram so charlotte, also always a pleasure and chatsworth farm offers city convenient trips for direct purchases and shares all aspects of their farm online also invite people take express life on the farm first-hand during the free event like open farm bays that comes up this august and for more information visit chatsworth farm.ca for their lively instagram page at instagram @ chatsworth underscore farm. >> Charlotte wasylik: thanks.
