Thank you all for joining us. >> Good morning. >> Tracy: how did the grand opening goat? >> It was chaos. >> But it was nice and it brought the community out and we had a lion dance. There was a lot of supporters and we can't think our customers and family and friends for all the support. >> Tracy: we are talking about this in the break. You are nurses. How did this transition happen? >> Sharon and I met nursing about ten years ago and we bonded over food and travelling so we did a lot of that in between working as nurses and we stumbled upon this concept of hand roll bar about four years ago now? Four or five years ago now and we loved it. We kept going back and we would go to other cities to try and other places as well.

so the concept itself is not new but we fell in love with the concept and loved how cozy it was and it was casual and you could stop by. We had great conversation and so we thought with a vibrant community like calgary it would do very well. >> Tracy: and you weren't busy enough with nursing? You needed another nursing. >> We love to nursing but we needed something else to top up and pick it up and now it's great. >> Tracy: I've heard great reviews it. I haven't forgotten about you. What are you going to make here? >> The saucy crab and the salmon and tofu. >> Tracy: do you want to start rolling away for us and showing us how it's done. You are a pro, right? >> Tracy: is there a secret to making the perfect hand roll? >> It comes down to using very simple ingredients like seaweed, rice and then generally we add a protein of some sort but the thing is the seaweed needs to be crisp. That's the difference between regular sushi and hand roles. When you put it in your mouth you feel the crispy seaweed contrasting with the warm rice. >> Tracy: you don't want it sitting around. It's like an interactive experience when you head into the restaurant. You order it and it's getting made fresh and then going right in your mouth. >> Exactly. The chef are putting it down and announcing what you are going to be eating and then we also tell all our customers it is best enjoyed immediately off the board. >> Tracy: hand roles are not the only thing you are serving up at raw. >> We have seven small plates. We realize for some consumers they don't really just want raw fish. They want appetizers. So we have carpaccio. People really like our tempura. >> It tempura and we recently added chicken for all gate. We have a short menu but we want to focus and what we are doing and good at. >> Tracy: doing it well. >> Doing it well. We don't want to overload with menu items. We want to focus on what we do well. >> Tracy: really quickly what have you got going on now? >> This is the salmon. >> Tracy: that looks so good. For people who want to check out the restaurant you need reservations and what do you suggest? >> Because of the bar style we only have 20 seats and don't take reservations because it's difficult for us to accommodate and it's meant to be a casual drop in. We do have the phone number you can call and see if there is a wait list or things are busy at the time. It's meant to be super casual to drop in and have date night or girls night. >> Tracy: come early, right? >> You will get an and the turnover rate is quick. >> Tracy: that looks like perfection. Adding 1500 new jobs won't move the needle for the whole province but it will mean there are a lot of new alberta families to find work. >> Reporter: mayor gondek was on hand for the ribbon-cutting and she says it's terrific we are adding jobs and has the fastest growing economy in canada but there is tension that comes with finding a safe home for everyone flocking to calgary to find a better life. >> There are about 260 people moving here each day and that is enough to fill 1 of those accordion buses.
