Restaurant inspections: Dusty mouse feces, no hot water, old beef, dirty saw in Wichita KS

Eleven Wichita-area restaurants and other businesses were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted Jan. 22-28.

Information about the Sedgwick County businesses and their violations, compiled Feb. 3, appears below with a summary of the problems inspectors noted on their reports. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases.

More than 60 establishments surveyed Jan. 22-28 passed their inspections with few or no violations. You can see them at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx. There’s also an alphabetical list of those below. Some may have appeared on a prior non-compliant inspection list.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are corrected as an inspection is taking place.

Businesses fall out of compliance with state rules when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, such as pest infestations or broken plumbing.

When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections

7 Brew Coffee, 3031 E. Central in Wichita — Three violations during a Jan. 24 inspection that was its first operational inspection after licensing. Cited over lack of hot water at bathroom and kitchen hand-washing sinks, water wasn’t hot enough at another sink, spray bottle of blue liquid wasn’t labeled with contents. Next inspection: Feb. 3.

Blue Fin Sake Bar and Sushi, 255 N. Washington in Wichita — Seven violations during a Jan. 25 routine inspection. Cited over kitchen sink with no hot water, scallops and shrimp weren’t cold enough in refrigeration, cooked eel was held at the wrong temperature, no food thermometer, dirty pans in clean storage, improperly thawing fish, raw chicken stored over bowl of raw broccoli, fried rice wasn’t kept hot enough. Next inspection: Feb. 4.

Church’s Chicken, 593 E. Pawnee in Wichita — Three violations during a Jan. 24 inspection prompted by a modified complaint. Cited over lack of hot water in men’s bathroom, no soap or paper towels at sink in dish washing area. Next inspection: Feb. 3.

Comfort Inn East Wichita, 9525 E. Corporate Hills Dr. in Wichita — One violation during a Jan. 24 follow-up inspection. Cited over incorrect chlorine levels in swimming pool. Next inspection: Feb. 3.

The Coop and Coffee House, 104 N. Baltimore in Derby — Two violations during a Jan. 23 inspection prompted by a modified complaint. Cited over milks and creams that weren’t kept cold enough in refrigeration, employee washed but didn’t sanitize blender. Next inspection: Feb. 2.

Doughmaha, 4600 W. Kellogg Dr., unit VC02 in Wichita — Five violations during a Jan. 24 inspection that was its first operational inspection after licensing. Cited for storing chemical bottles on top of food freezer, cookie dough made with butter wasn’t kept cold enough, butter and feta cheese weren’t kept cold enough, chili wasn’t kept hot enough, leaky kitchen hand-washing sink, milk wasn’t labeled with opening or discard dates. Next inspection: Feb. 3.

Azteca Mexican Restaurant, 1540 E. 61st St. N. in Park City — Nine violations during a Jan. 23 inspection prompted by a complaint. Cited for not covering containers of flour and salt and other items with lids, restaurant was using lemon-scented bleach instead of chlorine sanitizer, ramekins used as scoops were stored in flour and other food bins, no testing strips to measure strength of chlorine sanitizer, no paper towels at hand-washing sink by dish machine, wrong sanitizer concentration used for wiping cloths, containers of salsa and tamales weren’t labeled with preparation dates, leaky hand-washing sink in kitchen, restaurant cooks eggs and steaks to order but doesn’t have a consumer advisory posted about the risks of eating undercooked foods. Next inspection: Feb. 3.

Sonic Drive-In, 1414 E. Grand in Haysville — Four violations during a Jan. 24 inspection prompted by a modified complaint. Cited over lack of hot water at kitchen hand-washing sink, employee eating at food preparation table where chicken strips for customer consumption were being portioned, mixes in ice cream and shake machines weren’t labeled with package opening or discard dates, hood filters on flat top grill “were encrusted with grease deposits and food debris.” Next inspection: Feb. 3.

The Sweet Spot, 8448 W. Central in Wichita — Two violations during a Jan. 26 follow-up inspection. Cited for not having paper towels at hand-washing sink, water wasn’t hot enough in dishwasher. Next inspection: Feb. 6.

Villa Del Sol, 2227 N. Arkansas in Wichita — Eight violations during a Jan. 26 inspection listed as its first operational inspection after licensing. Cited over an unlabeled container of “unknown liquid,” employee didn’t wash hands or change gloves after handling raw meats, “approximately one hundred old and dusty mouse droppings in the garage storage area” and more in the cabinet below a sink at the bar, cooked rice and beans weren’t kept hot enough in steam table, old cheese sauce and ground beef, soap stored on top of cans of tomato puree, improperly thawing fish, milk carton not labeled with opening date. Next inspection: Feb. 5.

Yoder Meats, 6458 E. Central in Wichita — Four violations during a Jan. 24 routine inspection. Cited for sanitizer that wasn’t strong enough, unlabeled chemical bottle sitting on counter next to meat slicer, no kits to test strength of sanitizer, “meat saw had dried meat on blade and blade guide” even though it hadn’t been used the day of the inspection. Next inspection: March 3.
